I really wanted to smoke a boneless 5 pounder but my local grocery store only had bone-in 8 pounders available ... Oh well, better planning next year will fix that.<\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-11667-2\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-11667-2-0\"  class=\"panel-grid-cell\" ><div id=\"panel-11667-2-0-0\" class=\"so-panel widget widget_black-studio-tinymce widget_black_studio_tinymce panel-first-child panel-last-child\" data-index=\"3\" ><div class=\"textwidget\"><p>Start by trimming the fat cap and any silver skin from your pork butt. A common misconception, in My Humble Opinion, is that you should leave the fat cap on or trim it down to 1\/4 inch because it will baste the pork butt with magical flavors! NOT ... all the fat cap does is prevent the formation of that beautiful flavor infused bark that we all love.<\/p>\n<p>Rub your trimmed pork butt with roasted garlic <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Roasted Garlic Extra Virgin Olive Oil\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/roasted-garlic-extra-virgin-olive-oil\/\" data-shortcode=\"true\">extra virgin olive oil<\/a> and season it with \"<a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Dry Rub Recipes\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/dry-rub-recipes\/\" data-shortcode=\"true\">Jan's Original Dry Rub<\/a>\" (page 168 of my cookbook, <a class=\"thirstylink\" title=\"The Wood Pellet Smoker and Grill Cookbook\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/the-wood-pellet-smoker-and-grill-cookbook\/\" target=\"_blank\" rel=\"nofollow noopener\" data-nojs=\"false\" data-linkid=\"11161\">The Wood Pellet Smoker and Grill Cookbook<\/a>). Wrap the seasoned pork butt in plastic and refrigerate overnight.<\/p>\n<p>Preheat your wood pellet smoker-grill to 235\u00baF using CookinPellets.com 100% <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">Apple Mash<\/a> wood pellets. Smoke the pork butt for 3 hours before increasing the grill temperature to 375\u00baF. Cook the pork butt until the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> reaches 160\u00baF. Remove the pork butt and double wrap it in heavy duty foil. Return the pork butt to your grill until it reaches an <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"Thermapen Mk4 Thermometer\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/thermapen-mk4-thermometer\/\" data-shortcode=\"true\">internal temperature<\/a> of 205\u00baF.<\/p>\n<p>Wrap the foiled pork butt using two towels and allow it to rest in a closed cooler for 2 -3 hours (FTC) before pulling.
