You improvise! I planned ahead and defrosted (always in the fridge) a small pork loin and two large bone-in skin-on chicken breasts to be smoked two days in a row. But due to unplanned circumstances I was unable to smoke the proteins in the time frame intended. It came down to my having to cook the meat or risk having it go bad. So I decided to kill two birds with one stone ... or should I say \"Two for the price of one\" ... The price being the amount of time and cookinpellets.com <a href=\"http:\/\/amzn.to\/2wwOnXm\" target=\"_blank\" rel=\"noopener\">Premium Perfect Mix<\/a> wood pellets.<\/p>\n<p>Opted to use my Green Mountain Grill <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"GMG Davy Crockett Grill\/Smoker\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/gmg-2018-green-mountain-grill-davy-crockett-grill-smoker-with-cover-new-design\/\" data-shortcode=\"true\">Davy Crockett<\/a> Wood Pellet Smoker-Grill which turned out to be just the right size for this cook. The results were exquisite and oddly enough these two different meats were smoked and cooked at the same temperatures but the chicken breasts cooked to an <a href=\"http:\/\/amzn.to\/2vTTcIf\" target=\"_blank\" rel=\"noopener\">internal temperature<\/a> of 170\u00baF while the <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">apple<\/a> stuffed pork loin cooked to a temperature of 145\u00baF.<\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-10037-2\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-10037-2-0\"  class=\"panel-grid-cell\" ><div id=\"panel-10037-2-0-0\" panel-last-child\" data-index=\"5\" ><div class=\"textwidget\"><p>If you're like me you might not be the greatest knife man so I used a butterfly technique on the pork loin roast that I read about. I butterflied the roast as best as I could (there are a ton of videos online) and then placed the roast between two sheets of plastic wrap. Using a <a href=\"http:\/\/amzn.to\/2vUeyFo\" target=\"_blank\" rel=\"noopener\">stainless steel meat mallet<\/a>, I carefully flattened the pork loin roast to about half an inch thick. This thickness was perfect for stuffing using the roll up method. Worked out great and I will definitely be using this method again. The other option is to practice my butterfly techniques but I would probably waste too many roasts - Have you seen the price of meat these days?<\/p>\n<p>Chose to rub <a href=\"http:\/\/amzn.to\/2xFF9rF\" target=\"_blank\" rel=\"noopener\">roasted garlic extra virgin olive oil <\/a>under and on the chicken breast skin. Followed by seasoning under and on the chicken skin with my <a href=\"http:\/\/amzn.to\/2vADBSF\" target=\"_blank\" rel=\"noopener\">Poultry Seasoning<\/a>. Wrapped the seasoned chicken breast in plastic wrap and refrigerated for 4 hours.<\/p>\n<p>Thinly sliced a Granny Smith <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">apple<\/a> and laid the slices on the butterflied pork loin roast. Rolled the roast and secured it with <a href=\"http:\/\/amzn.to\/2etmaIu\" target=\"_blank\" rel=\"noopener\">silicone cooking bands<\/a>. Rubbed the stuffed pork loin roast with <a href=\"http:\/\/amzn.to\/2xFF9rF\" target=\"_blank\" rel=\"noopener\">roasted garlic extra virgin olive oil<\/a> and seasoned with my <a href=\"http:\/\/amzn.to\/2vADBSF\" target=\"_blank\" rel=\"noopener\">Pork Dry Rub<\/a>. Wrapped the seasoned roast in plastic wrap and refrigerated for 4 hours also.<\/p>\n<p>Preheated my Green Mountain Grill <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"GMG Davy Crockett Grill\/Smoker\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/gmg-2018-green-mountain-grill-davy-crockett-grill-smoker-with-cover-new-design\/\" data-shortcode=\"true\">Davy Crockett<\/a> to 200\u00baF using cookinpellets.com <a href=\"http:\/\/amzn.to\/2wwOnXm\" target=\"_blank\" rel=\"noopener\">Premium Perfect Mix<\/a> wood pellets. Smoked the chicken breasts and pork loin roast at 200\u00baF for 1 hour. Bumped the pit temp to 350\u00baF and cooked the chicken breasts and <a class=\"thirstylink\" rel=\"nofollow\" target=\"_blank\" title=\"CookinPellets Apple Mash\" href=\"https:\/\/www.smokinpetebbq.com\/wordpress\/recommends\/cookinpellets-apple-mash\/\" data-shortcode=\"true\">apple<\/a> stuffed pork loin roast for approximately an additional 1 hour until preferred <a href=\"http:\/\/amzn.to\/2wwu4JD\" target=\"_blank\" rel=\"noopener\">internal temperatures<\/a> were met. Chicken to 170\u00baF and Pork roast to 145\u00baF. Pulled and rested the meats for 15 minutes loosely under a foil tent before serving.<\/p>\n<\/div><\/div><\/div><\/div><div id=\"pg-10037-4\"  class=\"panel-grid panel-no-style\" ><div id=\"pgc-10037-4-0\"  class=\"panel-grid-cell\" ><div id=\"panel-10037-4-0-0\" class=\"so-panel widget widget_virtue_about_with_image virtue_about_with_image panel-first-child panel-last-child\"
