Smoked Pulled Chicken & Hash Brown Potato Casserole

We all find ourselves with leftover pulled Chicken now and then … whether it’s from a Rotisserie, Baked, Roasted, BBQ, Smoked or any multitude of other Chicken recipes.  The question is – what to do with it?  I, like most, love comfort food and always pull leftover chicken from the carcass to vacuum seal and freeze for use in casseroles, quick recipes calling for cooked chicken and Soups.

Googled “Chicken & Hash Brown Casserole” and got a zillion hits … Took a little from here and there and came up with this Chicken Casserole:

Ingredients:

  • 2-3 cups of Leftover Pulled Hickory Smoked Chicken
  • 1½ lbs of frozen Hash Browns
  • 2 cans Cream of Mushroom Soup
  • 4 oz can of Mushrooms
  • 2 cups Shredded Cheese
  • 1 pint Sour Cream
  • 1 medium chopped Red Onion
  • Salt, Pepper, Granulated Garlic to taste

Mixed all ingredients and baked in a covered greased casserole at 350ºF for 1¼ hours.  Served with steamed Broccoli, Zucchini and Yellow Squash.
